Sbrisolona is a traditional baked almond cookie from Mantova, Italy. It is satisfyingly crunchy, crumbly, and nutty, thanks to cornmeal and almonds. This one comes from Mantova’s oldest bakery, run by the Freddi family since 1923. We have never seen it in the U.S., so we’d like to let you in on our little sbrisolona secret.
