Our newest Manchego is a farmstead cheese from a family farm in Ciudad Real that has been in operation for over 200 years. A herd of 3,000 sheep live on the farm, which is run by solar energy. Cheesemaker Mirel is part of the 5th generation of the Melgarejo family that owns the farm. He makes Manchego Chisquero with raw Manchega sheep’s milk and ages it 6 months, rubbing the rind in olive oil. Supple and buttery, it has a lovely tangy finish. No wonder it won Super Gold at the World Cheese Awards in 2018.
